sh: Enable CONFIG_GCOV_PROFILE_ALL for sh
This patch enables gcov kernel profiling over the whole kernel for sh. Profiling of specific files individually already worked. A handful of files have to be explicitly excluded from the profiling to avoid breaking things, notably pmb.c.
